Lemon Vanilla Sugar Cookies

The avocado slicer. Ice cream maker. Lemon zester. You know, those lovely little wedding gifts that you place on your registry with such excitement, only to realize one point five years into marriage that you may have been a little too eager beaver while scanning such non-practical kitchen items onto that Macy's registry. 

And that Martha Stewart brand lemon zester I neglected in my utensil drawer for the first year and a half of marriage? I'm happy to report it was put to great use on Valentines Day, while baking the world's most delicious GF Lemon Vanilla Sugar Cookies. Take my word, they're finger-licking tasty. Perfect for a tea party, or to randomly brighten a friend's gloomy gray day. Check out the Girl Cooks World recipe here. I am the queen of tweaking recipes, and naturally quadrupled the amount of lemon juice + vanilla, plus substituted two cups of Pamela's Baking Mix, rather than the assortment of flours + xanthan gum. Because last time I checked, xanthan gum was way out of this frugal family's price range. Cheers to cheap & tasty treats!
